Espinaler potatoes are the soul of any appetizer. The secret lies in the raw materials and the artisanal production process: the potatoes are harvested in Soria between the end of summer and the beginning of autumn, and fried in pans in olive oil and with very little salt, to give all the preponderance to the flavour of the Espinaler potato and its exact frying point. The climate, the altitude and the exact point of ripeness in the harvest, make Espinaler potatoes the best aperitif potatoes.
